  • ½ cup sour cream
  • ⅓ cup brown sugar

  • 3 medium apples, peeled and sliced
  • ¼ cup light brown sugar
  • 1 tsp ground cinnamon
  • ¼ cup rolled oats

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, combine graham-cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of a springform pan.
  3. Bake the crust for 8–10 minutes until golden. Let cool.
  4. In another bowl, whisk cream cheese until smooth; add brown sugar, sour cream, and eggs one at a time until combined.
  5. Pour the cheesecake batter over the crust. Toss sliced apples with brown sugar and cinnamon; layer them over the cheesecake.
  6. Bake for 35–40 minutes until edges are set but center jiggles slightly.
  7. Cool in oven for an hour then refrigerate for at least four hours.
  8. For crumble topping: mix rolled oats with melted butter and brown sugar; sprinkle over chilled cheesecake and bake at 375°F (190°C) for about 12–15 minutes until golden.
