  • 1.5 cups non-fat Greek yogurt
  • â…“ cup monkfruit sweetener
  • â…“ cup cornstarch
  • Optional: 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 330°F (160°C). Line a 7×11 inch baking dish with parchment paper.
  2. Separate the egg yolks from the whites. Beat the egg whites until stiff peaks form; set aside.
  3. In another bowl, beat the egg yolks with monkfruit sweetener and optional vanilla until light and fluffy.
  4. Fold in Greek yogurt until well combined. Sift in cornstarch and mix gently.
  5. Carefully fold the beaten egg whites into the mixture.
  6. Pour the batter into the prepared baking dish.
  7. Place your baking dish in a larger baking sheet filled with boiling water (about 1/4 to 1/3 submerged).
  8. Bake for 45 minutes at 330°F (160°C), then increase temperature to 350°F (180°C) for another 15 minutes.
  9. Turn off the oven and crack open the door; let the cake cool inside for about 1-2 hours.
