  • 21/4 cups mirepoix (diced carrots, celery, onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 2 cups shredded extra-sharp Cheddar cheese

Instructions

  1. Brown the sausage in a large pot over medium-high heat until cooked through. Drain excess grease.
  2. Sauté mirepoix in one tablespoon of butter for 5-7 minutes until softened; add minced garlic.
  3. Stir in chopped potatoes, seasonings, and chicken stock. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. In another pot, melt four tablespoons of butter and whisk in flour to form a roux. Gradually add milk while whisking until smooth; stir in heavy cream.
  5. Combine the creamy mixture into the soup base, adding shredded cheese until melted. Fold in the cooked sausage.
