  • 1 lb ground turkey
  • 6 red bell peppers
  • 3/4 cup almond flour
  • 1/4 cup apple cider vinegar
  • 2 cloves garlic
  • 1/2 cup + 1 tbsp olive oil or avocado oil
  • 1 tsp sea salt
  • 1 egg
  • 1 tsp salt + more to taste
  • 1/4 cup finely diced red onion
  • 1 tbsp coconut aminos or soy sauce
  • 3 tbsp freshly chopped parsley
  • 2 tbsp freshly chopped mint

Instructions

  1. Preheat oven to 425°F (220°C). Halve red bell peppers, remove seeds, and brush with olive oil.
  2. Roast peppers for about 20 minutes until soft and slightly browned. Allow to cool.
  3. In a large bowl, mix ground turkey, egg, almond flour, salt, diced onion, coconut aminos, parsley, and mint until just combined.
  4. Form into 1.5-inch meatballs and place on a parchment-lined baking sheet.
  5. Reduce oven temperature to 375°F (190°C) and bake meatballs for about 20 minutes until golden brown.
  6. In a blender, combine roasted peppers with olive oil, apple cider vinegar, sea salt, and garlic; blend until smooth.
  7. Serve warm meatballs drizzled with sauce over cauliflower rice or vegetable noodles.
