  • 1 15-oz can Mandarin oranges (no sugar added; drained; ~1 1/2 cups)
  • 1/2 cup Goat cheese (crumbled)
  • 1/3 cup Walnuts (chopped)
  • 1/3 cup Dried cranberries
  • 1/3 cup Olive oil
  • 2 tbsp Apple cider vinegar
  • 1 1/2 tbsp Wholesome Yum Zero Sugar Orange Honey
  • 1/8 tsp Sea salt
  • 1/8 tsp Black pepper

Instructions

  1. In a large bowl or on a platter, arrange fresh spinach as the base.
  2. Layer drained mandarin oranges, crumbled goat cheese, chopped walnuts, and dried cranberries on top.
  3. In a small bowl, whisk together olive oil, apple cider vinegar, orange honey, sea salt, and black pepper until well combined.
  4. Drizzle the vinaigrette over the salad and gently toss to coat.
