  • 2/3 cup applesauce
  • 2 eggs
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup almond flour
  • 1 1/4 cup oat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • For the cinnamon sugar swirl: 2 tbsp salted butter, melted
  • 1 tbsp oat flour
  • 2 tbsp white sugar
  • 1/2 tbsp cinnamon
  • For the crumble topping: 1/4 cup salted butter, room temperature
  • 1/4 cup light brown sugar
  • 1/4 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish.
  2. In a large bowl, mix softened butter, applesauce, eggs, white sugar, and vanilla until well combined.
  3. Add almond flour, oat flour, baking powder, and salt; stir until smooth.
  4. In a separate bowl, prepare the cinnamon sugar swirl by mixing melted butter, oat flour, white sugar, and cinnamon.
  5. For the crumble topping, combine room temperature butter with light brown sugar, almond flour, oat flour, and cinnamon until crumbly.
  6. Pour half of the batter into the prepared dish; sprinkle with half of the cinnamon sugar mixture and gently swirl.
  7. Add remaining batter on top and repeat with the remaining cinnamon mixture; swirl lightly.
  8. Bake for about 25 minutes; add crumble topping and bake for an additional 18 minutes until golden brown.
  9. Cool completely before slicing to serve.
