  • 4 large whole wheat tortillas
  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 8 ounces fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup crumbled feta cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Dried oregano, to taste
  • Dried basil, to taste

Instructions

  1. Preheat your grill to medium heat.
  2. In a bowl, toss the zucchini, red bell pepper, and red onion with olive oil, salt, pepper, oregano, and basil.
  3. Grill the seasoned vegetables for 5-7 minutes until tender and charred; set aside.
  4. Sauté garlic in olive oil until fragrant; add spinach and cook until wilted.
  5. Assemble quesadillas by layering grilled veggies, sautéed spinach, cherry tomatoes, feta cheese, and mozzarella on one half of each tortilla. Fold over.
  6. Grill each quesadilla for about 3-4 minutes per side until golden brown and crispy.
  7. Let cool slightly before cutting into wedges; serve warm.
