  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar (for crumble topping)
  • 1/4 cup all-purpose flour (for crumble topping)
  • 2 tablespoons cold butter (for crumble topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In another bowl, mix pumpkin puree with granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just mixed.
  5. For the crumble topping, mix brown sugar and flour in a small bowl. Cut in cold butter until crumbly.
  6. Spoon the batter into muffin cups until they’re about three-quarters full. Sprinkle crumble topping over each muffin.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. Let them cool in the pan for five minutes before transferring to a wire rack.
