  • Juice of 1 large orange (for batter and glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add orange zest to the dry mixture and combine well.
  4. In another bowl, whisk together the egg, milk, vegetable oil, and fresh orange juice.
  5. Pour the wet ingredients into the dry ones and mix gently until just combined; do not overmix.
  6. Divide the batter evenly among muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  8. For the glaze, mix powdered sugar with orange juice until smooth.
  9. Once cooled slightly, drizzle the glaze over muffins and top with reserved zest.
