  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for frying)

Instructions

  1. In a mixing bowl, combine the mozzarella, feta, spinach, tomatoes, red onion, and black pepper. Mix well.
  2. Place one tortilla on a flat surface and add one-fourth of the filling mixture to half of it. Fold the tortilla over.
