  • 1 lb ground chicken

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • ½ tablespoon ginger paste or 1-inch fresh ginger, grated
  • 1 tablespoon peanut butter
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha (optional)
  • 3 tablespoons warm water
  • 2 cups kimchi, roughly chopped
  • 2 teaspoons toasted avocado oil
  • 2 teaspoons brown sugar
  • 8 fajita-size (6-inch) flour tortillas
  • Fresh veggies: cucumbers, carrots (sliced into thin strips)
  • Sliced avocado
  • Fresh herbs: cilantro, mint, green onions
  • Crushed peanuts
  • Sriracha mayo (see note)
  • Lime wedges

Instructions

  1. Heat avocado oil in a skillet over medium heat.
  2. Add ground chicken, salt, and pepper; cook until browned.
  3. Stir in soy sauce, brown sugar, garlic, ginger paste, peanut butter, sesame oil, sriracha (if using), and warm water; simmer until saucy.
  4. In another skillet, sauté chopped kimchi with toasted avocado oil and brown sugar until caramelized.
  5. Warm tortillas in a separate pan or microwave.
  6. Assemble tacos by layering chicken filling, kimchi, fresh veggies, avocado slices, and herbs.
  7. Serve with lime wedges on the side.
