My Fave Birria Tacos are a delicious way to bring friends and family together for a hearty meal.   • 3 lbs organic chuck roast beef
  • 4 dried guajillo peppers
  • 4 dried ancho chiles
  • 4 chipotle peppers in adobo
  • 1 onion, chopped
  • 4 garlic cloves
  • 1/2 cup crushed tomatoes
  • 1 Tbsp apple cider vinegar
  • 12 organic corn tortillas
  • Shredded Oaxaca cheese
  • 1 Tbsp Extra virgin olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 onion, diced
  • 4 cups organic beef stock
  • 2 cups water
  • 1 cup chopped fresh cilantro
  • Pico de Gallo
  • 2 bay leaves
  • 2 Tbsps Mexican oregano
  • 1 tsp dried thyme
  • 1/2 tsp cumin
  • 1/2 tsp ground cinnamon
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground allspice

Instructions

  1. Soak the dried guajillo and ancho chiles in hot water for about 15 minutes until softened. Blend with chopped onion, garlic, crushed tomatoes, apple cider vinegar, and spices until smooth.
  2. In a large pot, heat olive oil over medium heat. Sear the chuck roast chunks until browned on all sides.
  3. Add the blended sauce, beef stock, and bay leaves to the pot. Simmer on low for 2-3 hours until the meat is fork-tender.
  4. Shred the beef using two forks and mix it back into the broth.
  5. Warm corn tortillas in a skillet, fill with shredded beef and cheese, then crisp on both sides before serving topped with cilantro and pico de gallo.
