  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 6 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners.
  2. In a medium bowl, combine flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, mix granulated sugar, brown sugar, vegetable oil, pumpkin puree, eggs, and vanilla until smooth.
  4. Gradually add dry ingredients to the wet mixture until just combined.
  5. In another bowl, beat together cream cheese, sugar, egg yolk, and vanilla until smooth.
  6. Fill muffin cups halfway with pumpkin batter; add dollops of cream cheese mixture on top and gently swirl.
  7. Bake for 18-22 minutes until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.
