  • 3 teaspoons psyllium husk powder
  • 2 tablespoons date sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cup peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast in warm water for about 10 minutes until foamy.
  2. In a large bowl, whisk together cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt.
  3. Add proofed yeast, flax milk, and melted coconut butter to the dry mixture; stir until a dough forms.
  4. Let the dough rise covered in a warm spot for 45 minutes to an hour.
  5. Roll out the dough into a rectangle and prepare the filling by melting chocolate chips and coconut butter; mix with date sugar and cacao powder.
  6. Spread filling over the dough, sprinkle chopped peanuts, roll it up tightly, slice into pieces, and place in a greased baking dish.
  7. Bake at 350°F (175°C) for 20-25 minutes.
  8. While cooling, whip up the peanut butter caramel icing by blending all icing ingredients until smooth.
  9. Ice the rolls once slightly cooled and enjoy!
