  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. kosher salt
  • 1 tbsp. granulated sugar
  • 1 c. plus 2 tbsp. milk
  • 1/4 c. sour cream
  • 1 large egg
  • 3 tbsp. melted butter, plus more for pan
  • 1 c. shredded cheddar
  • 1 c. shredded mozzarella
  • 1/4 c. freshly grated Parmesan
  • Coarsely ground black pepper
  • 2 tbsp. mayonnaise
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together the milk, sour cream, egg, and melted butter until smooth.
  3. Gently fold the dry ingredients into the wet mixture until just combined.
  4. In a large skillet over medium heat, melt some butter. Pour a scant â…“ cup of pancake batter into the skillet twice, forming two pancakes.
  5. When bubbles start appearing (about 3-4 minutes), flip one pancake gently and top it with cheddar, mozzarella, Parmesan, and black pepper before flipping the second pancake.
  6. Once both pancakes are cooked until golden brown and cheese is melty (about another 3 minutes), stack one cheesy pancake atop another plain pancake. Spread mayonnaise on top of this stack before flipping it again.
  7. Continue with the remaining batter until all pancakes are cooked. Serve warm with a drizzle of maple syrup.
