  • 1/2 cup white sugar
  • 1/2 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup very cold butter (8 tablespoons)
  • 1 egg (beaten)
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries (chopped)
  • 1/3 cup white sugar
  • 2 teaspoons cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the white sugar, flour, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles small crumbs.
  4. In another bowl, combine the beaten egg and vanilla; mix into the crumb mixture until just combined.
  5. Press half of the crumb mixture into the bottom of the prepared pan.
  6. In a separate bowl, toss chopped strawberries with sugar and cornstarch; spoon over the crust.
  7. Sprinkle remaining crumb mixture on top of strawberries.
  8. Bake for about 45 minutes or until golden brown. Allow to cool completely before cutting into squares.
