  • 2 tsp sea salt
  • 1 tsp fresh cracked pepper
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 6 chicken thighs (or turkey strips)
  • 2 Tbsp extra virgin olive oil
  • 1 large shallot
  • 3 cloves garlic (grated or pressed)
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches (sliced)
  • Fresh basil (for topping)

Instructions

  1. Preheat oven to 350°F. Season chicken thighs with half of the salt, pepper, oregano, garlic powder, and paprika.
  2. In a sauté pan over medium heat, cook turkey strips for about 3 minutes until dark red; remove and set aside on paper towels.
  3. Add olive oil to the same pan and cook seasoned chicken thighs for about 1-2 minutes per side until browned.
  4. Remove chicken and sauté shallots for about 2 minutes until translucent; add grated garlic and cook another couple of minutes.
  5. Pour in chicken broth to deglaze the pan, scraping up brown bits; let simmer for about 3 minutes.
  6. Stir in butter and honey until melted together; return chicken thighs to the pan with thyme sprigs.
  7. Bake covered for about 15 minutes; then add sliced peaches on top and broil for an additional 3-5 minutes until softened.
