  • 0.25 cups fresh blackberry puree
  • 1 cup buttermilk
  • 2 cups fresh or frozen blackberries
  • 0.25 cups granulated sugar (for topping)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 cup heavy cream
  • 1.5 cups semi-sweet or dark chocolate (chopped)
  • 1 tbsp unsalted butter (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk flour, sugar, both cocoa powders, baking powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy; add eggs one at a time.
  4. Mix in vanilla extract, blackberry puree, coconut oil (or olive oil), and buttermilk.
  5. Combine dry ingredients into wet until just mixed; pour into greased cake pans.
  6. Bake for about 30 minutes; cool completely before frosting.
  7. Prepare topping by cooking blackberries with sugar, lemon juice, cornstarch, and water.
