  • 1 tbsp maple syrup
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup ricotta
  • 2 tbsp heavy cream
  • 1 tsp lemon zest
  • 2 tbsp hot honey (store-bought or homemade)
  • Fresh herbs (like mint or parsley) for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the carrots with olive oil, maple syrup, cumin, smoked paprika, salt, and pepper until well coated. Spread evenly on a lined baking sheet.
  3. Roast the carrots for about 25–30 minutes, flipping halfway through until tender and caramelized.
  4. While the carrots roast, blend ricotta, heavy cream, and lemon zest in a food processor until smooth.
