  • 4 bone-in, skin-on chicken thighs
  • 2 tablespoons gochujang
  • 2 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated

Instructions

  1. In a bowl, whisk together gochujang, miso paste, soy sauce, honey/maple syrup, rice vinegar, sesame oil, garlic, and ginger.
  2. Place chicken in a zip-top bag or bowl and pour the marinade over. Seal and refrigerate for at least 30 minutes (preferably overnight).
  3. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  4. Remove chicken from marinade (discard leftover marinade) and place skin-side up in the baking dish. Season with salt and pepper.
  5. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
  6. Optionally broil on high for an extra crispy finish.
  7. Let rest before serving and garnish with sesame seeds and sliced green onions if desired.
