  • 2 cups orzo (uncooked)
  • 1 red bell pepper, chopped
  • 1 English cucumber, chopped
  • 1/2 red onion, diced
  • 6 oz crumbled feta cheese
  • Juice and zest of 1 lemon
  • 1/2 cup extra virgin olive oil
  • Fresh parsley and basil
  • 23 garlic cloves, minced
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon cracked pepper

Instructions

  1. Cook orzo according to package instructions until al dente. Drain and rinse under cold water.
  2. While the orzo cooks, chop the red bell pepper, cucumber, and red onion.
  3. In a large bowl, combine cooled orzo with chopped veggies and minced garlic.
  4. Add lemon juice, olive oil, honey, salt, and pepper. Toss well.
  5. Fold in crumbled feta gently before chilling in the fridge for at least 30 minutes.
