  • 1 onion (diced)
  • 23 garlic cloves (minced)
  • 1 tbsp vegetable oil
  • 11 oz fresh mushrooms (sliced)
  • 4 tbsp white grape juice (optional)
  • 1 tbsp tamari or soy sauce
  • ¾ cup vegetable broth
  • ¾ cup plant-based milk or cream
  • 2 tbsp cornstarch
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • 1 pinch red pepper flakes
  • Salt & black pepper (to taste)
  • 1 tbsp nutritional yeast flakes (optional)
  • Fresh thyme leaves and/or parsley and/or tarragon (chopped)
  • Rice or pasta of choice

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add diced onion and sauté for about 5 minutes until translucent. Stir in minced garlic and cook for an additional minute.
  2. Add sliced mushrooms to the pan and sauté for about 5 minutes until browned and their moisture has evaporated.
  3. Pour in white grape juice (if using), vegetable broth, and tamari. Sprinkle onion powder, garlic powder, smoked paprika, and red pepper flakes into the mixture. Bring to a gentle boil.
  4. In a small bowl, mix cornstarch with plant-based milk until smooth. Stir this mixture into the pan continuously until thickened (about 10 minutes). Adjust seasonings as needed.
  5. Finish by stirring in chopped fresh herbs of your choice before serving over rice or pasta.
