  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 4 tbsp Unsalted Butter (softened)
  • 1 ounce Cream Cheese (softened)
  • 1 tsp Vanilla Extract
  • Zest of Half A Lemon
  • 2 tsp Lemon Juice
  • 4 ounces Cream Cheese (softened)
  • 1 cup Swerve Confectioner's Sugar Substitute
  • 1 squeeze Fresh Lemon Juice
  • Zest from Half A Lemon

Instructions

  1. In a mixing bowl, combine almond flour, Swerve sugar substitute, softened butter, cream cheese, vanilla extract, lemon zest, and lemon juice until smooth.
  2. Chill the dough for 1 hour.
  3. Roll out the chilled dough to ¼ inch thickness between parchment paper.
  4. Cut into circles using a cookie cutter.
  5. Bake on a parchment-lined sheet at 350°F (175°C) for 10-15 minutes until lightly browned.
  6. Allow to cool before preparing the filling by mixing softened cream cheese with Swerve sugar substitute and fresh lemon juice.
  7. Spread filling between two cooled cookies to assemble sandwiches.
