  • 2 cups grilled or roasted corn
  • 4 ounces cream cheese
  • 1/3 cup sour cream
  • 2 tablespoons extra virgin olive oil
  • 12 cloves garlic, grated
  • 1 tablespoon chopped fresh chives
  • Kosher salt and black pepper (to taste)
  • 1 head romaine lettuce, shredded
  • 1/2 cup fresh basil leaves, torn
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup spicy cheddar cheese, cubed
  • 1 avocado, chopped
  • 4 tablespoons salted butter
  • 2 teaspoons smoked paprika
  • 2 tablespoons chili powder
  • 1/22 teaspoons cayenne pepper (to taste)
  • 1/4 cup mayo or yogurt
  • 2 tablespoons lime juice

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together cream cheese, sour cream, olive oil, garlic, chives, salt, and pepper until smooth.
  3. In a large bowl, combine cooked pasta with shredded romaine lettuce, grilled corn, basil leaves, cilantro, spicy cheddar cheese, and avocado.
  4. Pour the dressing over the mixture and toss gently to combine.
  5. Season with smoked paprika, chili powder, cayenne pepper (if desired), mayo or yogurt, and lime juice.
  6. Chill in the fridge for about 10 minutes before serving.
