  • 800 g eggplant, cut into 2.5 cm cubes
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, finely minced
  • 1/2 small onion, finely chopped
  • 700 g tomato passata
  • 300 g spaghetti or other pasta
  • Fresh basil leaves, roughly chopped (for serving)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 200°C (400°F). Toss cubed eggplant with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until golden brown.
  2. In a skillet over medium heat, sauté garlic and onion until soft (about 5 minutes).
  3. Add grape juice to the skillet and simmer for 3-4 minutes. Stir in tomato passata, water, herbs, red pepper flakes (if using), salt, and pepper. Cook for another 10 minutes.
  4. Meanwhile, cook pasta according to package instructions until al dente. Drain and combine with the sauce.
  5. Stir in fresh basil before serving hot with grated Parmesan cheese if desired.
