  • 2 cups all-purpose flour
  • 1 ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 2 ½ tablespoon granulated sugar for filling
  • 1 teaspoon all-purpose flour for filling
  • ½ teaspoon pure vanilla extract for filling
  • 2 teaspoon whole milk for filling

Instructions

  1. Prepare the cream cheese filling by mixing softened cream cheese, granulated sugar, flour, vanilla extract, and milk until smooth.
  2. In a separate bowl, combine pumpkin puree, brown sugar, granulated sugar, eggs, sunflower oil, vanilla extract, and milk; whisk until well mixed.
  3. In another bowl, mix flour, pumpkin pie spice, baking powder, baking soda, and salt until blended.
  4. Gently fold dry ingredients into wet ingredients until just combined.
  5. Preheat the oven and prepare muffin tins. Fill each liner halfway with batter; add a spoonful of cream cheese filling and cover with more batter.
  6. Bake in a preheated oven for about 18 minutes or until a toothpick comes out clean from the muffin part.
