  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1/2 pound ground beef or lamb
  • 1 small onion, finely chopped
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 1 tablespoon tomato paste
  • 1/2 cup beef broth
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes clean and pierce them with a fork. Rub them with olive oil and bake for about 45–50 minutes until tender.
  2. Once baked and slightly cooled, cut the potatoes in half lengthwise and scoop out most of the insides while leaving enough flesh intact.
  3. In a skillet over medium heat, cook ground beef or lamb until browned. Add chopped onion and carrot; sauté until softened. Stir in tomato paste, beef broth, salt, pepper, and thyme; simmer until thickened. Fold in frozen peas.
  4. Mash the scooped-out potato flesh with butter and milk until smooth.
  5. Spoon the meat mixture into each potato skin and top with mashed potatoes and shredded cheese.
  6. Bake for an additional 10–15 minutes until cheese is melted and golden.
  7. Garnish with fresh parsley before serving warm.
