  • 3 Low-Carb Tortillas (cut in half)
  • 1 pound Shredded Chicken
  • 1/2 medium Onion (chopped)
  • 1 Red Bell Pepper (chopped)
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Chicken Broth
  • 1 tsp Chicken Bouillon Powder
  • 1 can RoTel Tomatoes (drained)
  • 1/4 cup Chopped Green Onions
  • 1 1/2 cups Shredded Colby Jack Cheese
  • 2 tbsp Butter

Instructions

  1. Preheat your oven to 350°F.
  2. Layer tortilla halves at the bottom of a greased 9×13 baking dish.
  3. In a skillet over medium heat, melt butter and sauté chopped onions and red bell pepper until tender.
  4. Add heavy whipping cream and chicken broth, simmering until thickened.
  5. Stir in chicken bouillon powder, salt, pepper, and drained RoTel tomatoes.
  6. Mix in shredded chicken and chopped green onions until well combined.
  7. Pour the mixture over tortillas and top with shredded Colby Jack cheese.
  8. Bake for 25-30 minutes until bubbly and golden brown.
