  • 1 1/2 pounds Ground Beef
  • 1/3 cup Almond Flour
  • 1/4 cup Almond Milk
  • 1 large Egg
  • 2 tbsp French Onion Soup Mix
  • 4 tbsp Butter
  • 1 large Onion (thinly sliced)
  • 1 1/2 cups Shredded Gruyere Cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine almond flour and almond milk in a bowl; let sit for 5 minutes.
  3. In a large bowl, mix ground beef, egg, French onion soup mix, minced garlic, thyme, and almond mixture until well combined. Season with salt and pepper.
  4. Shape into a loaf and place in a greased baking dish.
  5. Bake for about 40 minutes.
  6. While baking, melt butter in a skillet over medium heat; sauté onions until caramelized.
  7. Remove meatloaf from the oven, top with cheese and onions, then bake for an additional 5-10 minutes until melted.
  8. Allow to rest before slicing.
