  • 2 large eggs
  • 1/2 cup powdered sugar
  • 1 tablespoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 1/2 teaspoon fine kosher salt
  • 1/2 cup Halloween sprinkles
  • Melted dark chocolate (for decoration)

Instructions

  1. Preheat your oven to 350°F and line two sheet pans with parchment paper.
  2. In a mixing bowl, cream together the melted coconut oil, eggs, powdered sugar, and vanilla until smooth.
  3. Gradually mix in the flour and salt until well combined but do not overmix.
  4. Fold in the Halloween sprinkles and chill the dough for 30-45 minutes.
  5. Roll out chilled dough to about 1/2-inch thickness and cut out shapes with cookie cutters.
  6. Place on prepared pans and bake for 9-10 minutes until lightly golden. Cool before drizzling with melted dark chocolate.
