  • 5 large carrots, peeled and chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup vegetable broth
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup nutritional yeast (optional for a cheesy flavor)
  • 12 ounces of your favorite pasta
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent (about 5 minutes).
  3. Add chopped carrots and vegetable broth. Cover and simmer for 10-15 minutes until carrots are tender.
  4. Blend the carrot mixture with almond milk, thyme, smoked paprika, salt, pepper, and nutritional yeast until smooth.
  5. Return sauce to skillet over low heat to warm through. Toss cooked pasta in the sauce until well-coated.
  6. Serve warm with fresh parsley sprinkled on top.
