  • 1 Tbsp olive oil
  • 1 tsp garlic salt
  • 1/4 tsp pepper
  • 1/2 cup marinara or pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/3 cup sliced turkey pepperoni (or alternative protein)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each zucchini in half lengthwise and scoop out the insides to create boats. Arrange cut-side up on a lined baking sheet.
  3. Drizzle olive oil over the zucchini and season with garlic salt and pepper.
  4. Spoon marinara sauce into each zucchini boat, then top with mozzarella cheese and turkey pepperoni.
  5. Bake for 15-18 minutes until the cheese is bubbly and the zucchini is tender.
  6. Let cool slightly before serving.
