  • 2 cups Cherry Tomatoes
  • 1 cup Persian or seedless cucumber (chopped)
  • 1/2 medium Red onion (chopped or sliced)
  • 1/2 cup Kalamata Olives
  • 1/2 cup Feta cheese (broken into chunks)
  • 1/4 cup Extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 clove Garlic (minced)
  • 2 teaspoons dried oregano
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper

Instructions

  1. Marinate the Chicken: In a ziplock bag, mix olive oil, apple cider vinegar, minced garlic, dried oregano, salt, and pepper. Add chicken and refrigerate for at least one hour.
  2. Cook the Chicken: Heat a non-stick pan over medium heat. Cook chicken for 8-10 minutes per side until golden brown and internal temperature reaches 165°F. Let it rest before slicing.
  3. Assemble the Salad: In a large bowl, combine chopped romaine lettuce with cherry tomatoes, cucumber, red onion, olives, and sliced chicken. Top with feta cheese.
  4. Dress the Salad: Drizzle remaining dressing over the salad and toss gently to combine.
