  • 1 red bell pepper (sliced)

  • 3 cloves garlic (minced)
  • ½ cup unsalted roasted peanuts (chopped)
  • ¼ cup maple syrup or honey
  • ¼ cup light-sodium soy sauce or coconut aminos
  • 2 tablespoons rice vinegar
  • Juice of 1 lime

Instructions

  1. Prepare the sauce: Whisk together maple syrup or honey, soy sauce or coconut aminos, rice vinegar, and lime juice in a small bowl.
  2. Cook the noodles: Follow package instructions for Thai rice noodles; drain and set aside.
  3. Sauté chicken: Heat 1 tablespoon groundnut oil in a skillet over medium heat. Add chicken slices and cook until golden brown.
  4. Add veggies: Remove chicken from skillet. In the same pan, add another tablespoon oil and sauté red bell pepper, carrots, and garlic for about 5-6 minutes.
  5. Scramble eggs: Push veggies aside and scramble beaten eggs until just set.
