  • 2 garlic cloves (minced)
  • 2 cups cooked chicken breast (shredded)
  • 14 ounces black beans (one can, drained well)
  • 2 tablespoons taco seasoning
  • 2/3 cup Greek yogurt
  • 6 corn or wheat tortillas (8 inches)
  • 1/2 cup fresh cilantro (minced)
  • 1 cup shredded cheese
  • Thinly sliced lettuce
  • Tomatoes

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté the diced onion for about 5 minutes until translucent.
  2. In a medium bowl, mash the black beans with a fork.
  3. Add minced garlic and shredded chicken to the skillet with onions. Stir and cook for another 2-3 minutes.
  4. Incorporate mashed black beans and taco seasoning into the skillet; cook for an additional 3 minutes. Mix in Greek yogurt and cilantro before removing from heat.
  5. In another pan, heat each tortilla until golden brown and crispy, about 1-2 minutes per side.
  6. Assemble tacos by placing cheese on tortillas, adding the chicken mixture, and topping with tomatoes and lettuce.
