  • 1/2 cup buffalo hot sauce
  • 4 cups romaine lettuce (shredded)
  • 1 cup bell pepper (sliced)
  • 1/4 cup red onion (chopped)
  • 1/4 cup green onion (sliced thin)
  • 1 cup cherry tomatoes (halved)
  • 1 cup chickpeas
  • 2 cups cooked rice
  • 1 avocado (sliced)
  • 1/4 cup ranch dressing

Instructions

  1. In a medium bowl, toss the shredded chicken with buffalo hot sauce until evenly coated.
  2. In four bowls or containers, layer each with 1/2 cup of cooked rice as the base.
  3. Add approximately 4 oz of buffalo chicken and top with 1/4 cup chickpeas.
