Crispy Chickpea Lettuce Wraps are a deliciously healthy meal perfect for busy weeknights or casual gatherings. These delightful wraps feature roasted chickpeas seasoned with garlic and smoked paprika, nestled in fresh lettuce leaves for a satisfying crunch.

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of ½ lemon
  • 8 large romaine or butter lettuce leaves

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
